Quick & Easy Bruschetta

If you've been to any Italian restaurant, you'll recognise what this is. 

Bruschetta is an antipasto. Or a starter, if you will, before your main course.

I used to have this as a snack quite a bit because it's so, so simple to make and it's rather healthy too!

If you Google it, this is what you'll find: "Bruschetta is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt."

At home we usually have it with tomatoes and mushrooms, as shown in the pic above. I'll be sharing with you how to make this quick bite within minutes at home.

This recipe is for 2. 

For the tomato topping,
Here are the things you will need:

1. 1 Baguette

2. 1 very large/2 small tomatoes - diced; small cubes

3. 2 pips garlic - minced

4. 1/2 lemon - squeezed

5. 1/2 stalk Coriander - thinly chopped

6. Ground black pepper - 1 tsp

8. Butter

7. Salt to taste


Here's how you make it: 

1. Put the diced tomatoes in a mixing bowl.

2. Add in the minced garlic, coriander and ground pepper.

3. Gradually add in the lemon juice, tasting as you go, in case it gets too tart for your liking.

4. Add in the salt. Mix well.

5. Cut the baguette, diagonally, into half inch slices.

6. Butter each slice. Spoon the tomato topping generously onto each slice. Enjoy!


For the mushroom topping,
Here are the things you will need:

1. Fresh button mushrooms - 1 handful

2. 8 pips garlic - minced

3. Butter - 60g butter more or less

4. 1/2 tsp Dried oregano

5. 1 stalk Thyme

6. Salt to taste


Here's how you make it:

1. Heat a pan & add in the butter. Let it melt. Keep pan on medium to low heat.

2. Add in garlic, stir.

3. Add in mushrooms, dried oregano and thyme.

4. Add in salt to taste.

5. Let it cook for a little bit. Then turn off heat.

6. Spoon generously onto buttered baguette slices. Enjoy!


I've also made some with a ham and cheese topping, as shown in the picture below (behind the ones with the tomato topping.)
So there you have it! Quick & easy toppings for you to make your own bruschetta.

My Version of Egg Noodles

I've been craving wan tan mee for the past week but we've just never gotten around to having it. Fried Udon

I'll be sharing a very simple Fried Udon recipe today. I remember making this one night after a long day of classes. Took me less than 15 minutes. It kinda looks like mamak mee goreng because of the noodles but I like this udon better than the yellow mee that is usually used for fried noodles.
