My Version of Egg Noodles

I've been craving wan tan mee for the past week but we've just never gotten around to having it.
So today after sending my sister to class I stopped by the supermarket & picked up a few things to make it at home. Minus the wan tan lol.

Oh and this recipe is for 1.


Here are the things you will need:

1. 1 small carrot, sliced
2. Japanese sawi aka gai choy, as much as you like. Half chopped, half left whole
3. 3 pips garlic, finely chopped
4. small piece of ginger, finely chopped
5. 1 green/red chilli, chopped
6. 1 tablespoon dark soy sauce
7. 1/4 teaspoon light soy sauce
8. 2 tablespoons oyster/abalone sauce
9. 1/4 teaspoon sesame oil
10. 1/4 cup water
11. Egg noodles - I bought a random packet from the supermarket with 4 servings. I suppose any brand works


Here's how you make it:

1. For the sauce, heat a pan over the stove and put in the garlic, then ginger, then chillies. Stir-fry for a little bit.
2. Turn down the heat to medium and add the oyster/abalone sauce, dark soy sauce, light soy sauce, sesame oil & water. Mix it all together.
3. Add the chopped carrots and then the sawi. Let simmer for a minute or so and turn off heat.
4. In a pot, boil some water & blanch the sawi that was left whole. Remove & set aside. Replace pot with fresh water & leave to boil.
5. Remove egg noodles from packet & loosen it up. Place in pot once water starts to boil & cook for about 2 minutes. It should still have a bit of a bite to it unless you like it soft, then cook for a little longer. Remove from water and place in a bowl.
6. Mix the sauce with the noodles & palce blanched whole sawi on top. Enjoy hot!


That's all there is to it!
You can add any other extra ingredients if you want, like chicken, prawns, fishcake, scallions to garnish etc.

Fluffy Japanese Souffle Pancakes

I've been meaning to make these fluffy little pancakes for many months now but I simply didn't have it in me to make sure I had all the ingredients to actually make it. Because: laziness.
